Ingredients
2 cups warm mik
2 tablespoons instant dry yeast
1/4 cup sugar
2 teaspoons salt
6 tablespoons melted butter
6 cups all-purpose flour
2 tablespoons melted butter (hold till the end)
Instructions
In the bowl of a stand mixer fitted with a dough hook, combine the warm milk, yeast, sugar, salt, melted butter, eggs, and 5 1/2 cups of the flour.
Turn the mixer on low speed. Once the flour starts to incorporate into the dough, slowly increase the speed to medium. Once the mixer is set to medium speed, slowly add the remaining 1/2 cup of flour until the dough becomes sticky and starts to pull away from the sides of the bowl. Allow the dough to knead in the mixer for 8-10 minutes until the dough becomes slightly sticky and soft.
Note: If you don't have a standing mixer, you can knead the dough by hand. Make sure to knead the dough for at least 10 minutes if you're kneading by hand. Once you bread is fully kneaded to the desired consistency, transfer the dough to a large lightly greased bowl. Cover the dough with a towel and set aide to rise until doubled in size. This usually takes about 90 minutes.
Note: Dough rises best in a warm atmosphere. If you are baking bread on a cold day, you can always preheat your oven to create a warm space for your dough to rise. Or you could place your dough in a nice sunny corner of your home, this is the way I do it and it makes a world of difference!
Once your dough is ready, lightly grease a large baking sheet. Punch down the dough and form the dough into 24 rolls. Using a food scale is a great way to make sure your rolls are properly portioned. I usually shoot to have my roll balls weigh right around 2.3 grams. Once your roll dough balls are formed and place on your baking sheet, cover your dough again with a towel to rise until double in size, about 1 hour.
Preheat the oven to 375ºF. Bake the rolls fro 12 to 15 minutes or until lightly browned on top.
Remove the rolls from the oven and brush with the 2 tablespoons of melted butter. Let the rolls rest on the baking sheet for 15 minutes before transferring them to a wire cooling rack. Serve warm or allow to cool completely. The rolls store wonderfully in a large Tupperware or plastic gallon bags for 3 to 4 days.
We've just learned how to make soft, golden, and irresistibly fluffy homemade dinner rolls from scratch. With simple ingredients and easy-to-follow steps, you can now bring a warm, comforting touch to any meal, whether it's a cozy family dinner or a special gathering.
